Pico de Gallo

Fresh tomatoes with chopped red onion, cilantro, and jalapenos could only make one condiment that pleases everyone -- pico de gallo. This version blends the flavors of fresh, ripe tomatoes with cilantro, garlic, and lime then adds red onions and jalapenos for a spicy, tasty salsa that will complement any burrito, fajita, baked potato, chips -- the possibilities are endless. Try it on my Chipotle-style burrito for a real treat.

  • 2 Tbsp fresh cilantro, minced
  • 2.5 tomatoes on-the-vine, deseeded and chopped
  • 1/2 medium red onion, chopped
  • 1 jalapeno, minced
  • 1 tsp salt
  • 2 garlic cloves, minced
  • 1 lime, juiced

Toss all ingredients in a bowl. Cover and refrigerate to let the flavors come together for 1-2 hours before enjoying.
