Guacamole

Everyone says that guacamole is so easy to make and it is, as long as you get the proportions of all of the ingredients right. This is the first batch of guacamole that I've made that really came out tasting great. I especially enjoyed the spices along with the fresh tomatoes and onions.


Guacamole

Ingredients
  • 2 Haas avocados
  • 1 lime, juiced (see note below)
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 1/4 cup medium white onion
  • 1/2 habanero or jalapeno pepper, seeded and minced
  • 1 Roma tomato, seeded and diced
  • 1 Tbsp cilantro, chopped
Instructions
In a large bowl, scoop the avocado out of its skin, mash it with a fork, and mix with 2 teaspoons of the lime juice. Note: use caution as this is how all of my batches of guacamole have been ruined -- with too much lime juice. Start with 1/2 the lime, then add more later if desired. Mix with the rest of the ingredients. Add more lime juice, if desired. Serve immediately or chill first. Great on enchiladas and fajitas.
