Roasted Asparagus with Sliced Almonds

This is a simple roasted asparagus side dish that makes a great accompaniment to a pasta, risotto, or casserole dish.

Roasted Asparagus with Sliced Almonds
Serves 3-4

  • 1 bunch asparagus
  • 1/4 cup toasted sliced almonds
  • Olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Preheat the oven to 400-degrees. Trim the asparagus and chop off the bottom of each stalk. Place the asparagus stalks and toasted almonds in a glass baking dish. Toss them in olive oil, sea salt, and pepper.

Roast for about 15-20 minutes. Remove from oven and serve immediately.
