Quinoa Salad with Black Beans and Mango

Quinoa Salad with Black Beans and Mango from Veganomicon by Isa Chandra Moskowitz and Terry Hope Romero is a simple salad to make that is perfect for potlucks. I just happened to be going to a potluck so I decided to prepare it. If nothing else, it looks beautiful!


Quinoa Salad with Black Beans and Mango
Serves 4 to 6
Time: 15 minutes

Ingredients
  • 1 mango, peeled and diced
  • 1 red bell pepper, diced
  • 1 cup chopped scallions
  • 1 cup chopped fresh cilantro
  • 2 T red wine vinegar
  • 2 T olive oil
  • 1/4 tsp salt
  • 2 cups cooked quinoa, cooled
  • 1 15-oz can black beans, drained and rinsed
Instructions
Combine the mango, red bell pepper, scallions, and cilantro in a mixing bowl.


Add the red wine vinegar, olive oil, and salt and stir to combine. Then, add the quinoa and stir until well mixed. Fold in the black beans and you're done!


The salad is pretty easy to make and is impressively colorful. The subtle flavors are a good accompaniment to most dishes at a potluck. Enjoy!
